Week 2 of our 30 Days Stronger Challenge and what better way to gear up for the halfway mark than with stunning Friday night healthy post-gym meal recipes for you and your gym buddy?
Healthy Fish & ChipsThis healthy twist on a familiar favourite is bound to become your new go-to!

1 tbsp olive oil, plus a little extra for brushing
2 white fish fillets about 140g/5oz each
grated zest and juice 1 lemon
small handful of parsley leaves, chopped
1 tbsp capers, chopped
2 heaped tbsp 0% Greek yoghurt
lemon wedge, to serve
Method:Step 1: Toss your potatoes in oil and spread them on a baking sheet. Pop them in an oven preheated to 200°C for 40mins or until golden brown. In a shallow dish, add the fish and give it a light brush with some oil. Season the fish with salt and pepper and a sprinkle of lemon juice. Bake in the oven for 12-15 mins. Add a sprinkle of parsley & lemon zest over the fish after 10mins to add more flavour at the end of the cooking time.
Step 2: While everything else is baking, mix your capers, yoghurt, the rest of the parsley & lemon juice together. You can season this with a little salt and pepper to taste. Divide your fish and chips between plates and serve with a dollop of your yoghurt sauce.
3-Ingredient Banana Ice CreamWe can't forget about a little dessert, can we? This EASY high-protein banana ice cream will be the perfect ending to any meal or a fun snack during the day.

1 tsp vanilla extract
¼ cup vanilla protein powder
Method:All you need to do for this recipe is add all the ingredients to a blender, blend until smooth & serve. You can add any toppings of your choice such as chocolate sauce, nuts, biscuit bits etc.
