Try this refreshing Pad Thai salad as a great introduction to the benefits delicious raw food brings.
Serves 2Prep time 20 minutes
You will need a lovely collection of vegetables including;1 courgette
1 large carrot
1/2 red pepper, finely sliced
4 spring onions, finely sliced into rings
50g beansprouts
50g spring pointed cabbage, finely sliced
handful coriander, roughly chopped
1 red chilli, finely sliced
50g natural peanuts
4 tbsp crunchy peanut butter
juice of a lime
2 tbsp soy sauce
100ml water
Spiralizers can be bought online for less than £5; you dont need an electric one, a hand operated one will do the job just fine.
- Spiralise the courgette and the carrot. Place in a roomy bowl.
- Chop the pepper into fine strips.
- Slice the spring onion on the diagonal.
- Shred the white cabbage finely.
- Chop the corriander, including the stalks.
- Whizz together the peanut butter, lime, soy and water to make a creamy Asian inspired dressing.
- Add in the pepper, spring onions, beansprouts, cabbage, coriander, chilli and nuts all to a big bowl. Toss everything together with the dressing.
- Pour over the vegetables then toss to coat everything evenly.
- Serve sprinkled with a few extra nuts and coriander.
