This nutritious granola bar is a healthy pre or post work out snack. It's very simple to make with little or no cooking skills required. If you have a family, we suggest it might be a great recipe to put together with your kids and offer them as an after school snack. This recipe makes 12 bars and can be stirred together in less than 15 minutes, ready to eat after about 2 hours of chilling in the fridge.
You will need:
1 cup puffed rice
1 1/2 cups gluten free rolled oats
1/2 cup cacao nibs
1 cup pistachios, chopped
1 cup sour cherries, chopped
1/2 cup coconut oil
1/2 cup peanut butter
1/2 cup honey
All you need to do is follow these simple steps:
Use a fairly generous mixing bowl and add your puffed rice,
Rolled oats,
Cocao nibs,
Chop your pistachio nuts and sour cherries and add those to the dry mixture.
Get a small pan and melt the oil, peanut butter and honey together. Don't let it boil; just stir it on a medium to low heat until it mixes well into a syrup. Pour this warm mixture into your bowl of dry ingredients and mix it really well, until everything is coated evenly.
Line a deep baking tray with parchment paper and scrape the oaty mix into the tray, spreading it to the edges and getting an even thickness. Press the mixture down firmly with the back of a spoon to remove any air pockets.
Cover and let the mixture chill in the fridge for at least 2 hours. Then you can cut your granola into 12 bars. Stored in an air tight container, they will last for up to 3 weeks! But not in our household... more like 3 minutes :)
